Bellows cheese is the oldest Romanian cheese. It is the homogeneous result of a mixture of sheep's curd and cow's curd to which a maximum of 3% salt is added.
Homemade bellows cheese has a generous shelf life from the date of manufacture, of 90 days in optimal storage conditions.
