Originally an Australian invention called a lamington, this treat has been now been popularized all across Europe, especially Hungary. It is traditionally made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut. This variation, however, is made with a fluffy vanilla cake batter with almond extract. The thin mixture is absorbed into the outside of the sponge cake and left to set, giving the cake a distinctive moist texture.
